Zesty Lemon Orzo with Zucchini
Abigail’s Kitchen Rice Pilaf
RECIPE SERVES 4
WHAT YOU WILL NEED
- Abigail’s Rice Pilaf
- 2 Tbsp of Lemon juice
- ½ Cup Frozen Zucchini/Squash
- 1 tsp Olive Oil
- 2 Tbsp Lemon Juice
- ½ Tbsp Lemon Zest
- Crumbled feta cheese
- ¼ Cup fresh chopped basil (Optional)
DIRECTIONS
- Prepare Abigail’s Rice Pilaf using provided instructions. Adding additional lemon juice at the beginning. After half of cooking time, add frozen zucchini/squash and cook remaining 8-12 minutes or until rice is fully cooked.
- Add in lemon zest and crumbled feta cheese (Optional fresh herbs)
- Serve hot
