Zesty Lemon Orzo with Zucchini

Abigail’s Kitchen Rice Pilaf

RECIPE SERVES 4

WHAT YOU WILL NEED

  • Abigail’s Rice Pilaf
  • 2 Tbsp of Lemon juice
  • ½ Cup Frozen Zucchini/Squash
  • 1 tsp Olive Oil
  • 2 Tbsp Lemon Juice
  • ½ Tbsp Lemon Zest
  • Crumbled feta cheese
  • ¼ Cup fresh chopped basil (Optional)

DIRECTIONS

  1. Prepare Abigail’s Rice Pilaf using provided instructions. Adding additional lemon juice at the beginning. After half of cooking time, add frozen zucchini/squash and cook remaining 8-12 minutes or until rice is fully cooked.
  2. Add in lemon zest and crumbled feta cheese (Optional fresh herbs)
  3. Serve hot
