Herb Olive Italian Orzo Salad

Abigail’s Long Grain and Orzo - Pilaf

RECIPE SERVES 4

WHAT YOU WILL NEED

  • 1 Pack Abigail’s Rice Pilaf
  • 2 Tbsp (1 oz) of sliced Kalamata olives
  • ¼ Cup (2 oz) Halved cherry tomatoes
  • 2 Tbsp (1 oz) Lemon Juice
  • ½ Tbsp Lemon Zest
  • 3 oz Crumbled feta cheese
  • ¼ Cup (2 oz) Red Onion diced
  • ¼ Cup (2 oz) Cucumber diced
  • ¼ Cup (2 oz) Red bell pepper diced

Dressing:

  • ¼ Cup Olive Oil
  • 3 Tbsp of Red wine vinegar
  • 1 tsp of Oregano
  • Salt and pepper

DIRECTIONS

  1. Prepare Abigail’s Rice Pilaf using provided instructions. Adding additional lemon juice at the beginning. Once cooked cool rice pilaf completely.
  2. In a bowl mix olive oil, red wine vinegar, oregano, salt and pepper until dressing is completely mixed. Mix in cooled rice pilaf and add in cheese, lemon zest and all vegetables.
  3. Serve cold
