Herb Olive Italian Orzo Salad
Abigail’s Long Grain and Orzo - Pilaf
RECIPE SERVES 4
WHAT YOU WILL NEED
- 1 Pack Abigail’s Rice Pilaf
- 2 Tbsp (1 oz) of sliced Kalamata olives
- ¼ Cup (2 oz) Halved cherry tomatoes
- 2 Tbsp (1 oz) Lemon Juice
- ½ Tbsp Lemon Zest
- 3 oz Crumbled feta cheese
- ¼ Cup (2 oz) Red Onion diced
- ¼ Cup (2 oz) Cucumber diced
- ¼ Cup (2 oz) Red bell pepper diced
Dressing:
- ¼ Cup Olive Oil
- 3 Tbsp of Red wine vinegar
- 1 tsp of Oregano
- Salt and pepper
DIRECTIONS
- Prepare Abigail’s Rice Pilaf using provided instructions. Adding additional lemon juice at the beginning. Once cooked cool rice pilaf completely.
- In a bowl mix olive oil, red wine vinegar, oregano, salt and pepper until dressing is completely mixed. Mix in cooled rice pilaf and add in cheese, lemon zest and all vegetables.
- Serve cold
